The food costing formula is more than food cost divided by revenue
Most independent restaurant operators know the basic formula. Take your food cost, divide by revenue, multiply by 100. That gives you a percentage. If it is under 30%, you feel good. If it is over 35%, you start cutting corners.
The problem is that this single number tells you almost nothing about which dishes are making money and which ones are bleeding it dry.
A pasta dish with a 22% food cost sounds great until you realize it takes your line cook 12 minutes to plate and the real estate it occupies on the menu could go to something that turns faster and earns more.
The real food costing formula is actually a set of formulas. Each answers a different question. Together they give you the full picture.
Plate cost formula: the foundation of every calculation
Before you can know your food cost percentage, you need to know what each plate actually costs. This is the plate cost formula.
Plate cost is the sum of every ingredient that goes onto a plate, measured to the fraction of an ounce.
Take a chicken sandwich at a fast-casual spot in Nashville.
Here is how it breaks down for one sandwich:

That $2.30 is what the kitchen spends every time that sandwich leaves the window. Next question: what do you charge for it?
Food cost percentage formula: from plate cost to the number that matters
Once you have plate cost, food cost percentage is straightforward.
If you charge $9.50 for that chicken sandwich: ($2.30 / $9.50) x 100 = 24.2%. That is a healthy number. If you are running 24% on your best-selling items, you are in good shape.
Most operators do the reverse. They set a price first, usually by looking at what the pizza place down the street charges, then hope the math works out. When it does not, they wonder why the bank account looks thin at the end of the month.
A BBQ joint in Kansas City might price brisket at $24 a plate. At first glance that sounds expensive. But if the plate cost is $9.80 (brisket is not cheap), the food cost is 40.8%. That operator is leaving money on the table even though the menu prices look high. The formula does not lie.
Food costing AND pricing formula: the combined approach
This is the formula that connects your plate cost directly to your menu price. There are two common ways to do it.
Using the chicken sandwich at a 28% target: $2.30 / 0.28 = $8.21. You could charge $8.25 or $8.50 and still hit your target.
The other approach uses a pricing factor, sometimes called a cost multiplier.
At 28%: 1 / 0.28 = 3.57. Multiply any plate cost by 3.57 to get the target menu price. $2.30 x 3.57 = $8.21. Same result, different route.
A taco shop in Austin running a 25% target on their barbacoa tacos (plate cost $1.40) would price at $1.40 / 0.25 = $5.60. Round up to $5.75 or $5.99. Most places use the factor method because it is faster once you have your number locked in.
The prime cost formula: why labor changes everything
Food cost is only half the story. The prime cost formula combines food cost and labor cost. For most restaurants, this is the single most important number on the P&L.
Industry target: 55% to 60% combined. If your food cost is 30% and your labor is 32%, you are at 62%. That extra 2% on a $50,000 monthly revenue is $1,000 a month you should be keeping.

Food trucks can run a lower prime cost because they skip the dining room staff. Fine dining spends more on labor because every plate needs more hands. Neither is wrong. What matters is knowing your number and staying inside it.
